Domaine de la cadette – L’Ermitage

Grape varieties : César, Pinot noir

This cuvée is produced from a blend of Pinot Noir (85%) and César (15%), the latter being a grape variety introduced in Northern Burgundy by the Romans during the conquest of Gaul. The vines are about thirty years old and are planted on south-facing plots of land with clayey-silt soil on grey marl.

After manual harvesting (and manual sorting in the vineyard), the grapes are put in vats in whole bunches or destemmed or both depending on the vintage. The alcoholic fermentation takes place with the indigenous yeasts, with some punching down (operation which consists in pushing the cap of marc in the must).

After devatting and blending the free-run juice and the press juice, the wine is aged in barrels for 10 months, before being bottled without fining or filtration, with a slight addition of sulfur.

This cuvée L’Ermitage has a more present tannic structure than the cuvée Garance. This is due to the César grape variety and allows it to be kept for 5 years or more. This wine remains accessible in its youth because the greed is there!

This wine with a strong personality is a perfect combination of balance and precision, with a fluid and fleshy frame, on notes of fruits and undergrowth. As with all great wines, the freshness is there to magnify the bright fruit.

A natural wine from the Dordogne that will be the perfect accompaniment to a meat dish or spicy cuisine.
