Jean Huttard – Grasburg Gewurztraminer
This Grasburg Late Harvest is an ode to life and sharing. However, it does not know how to pair with food. Indeed, its aromatic richness will overpower its accompaniment. We recommend it at the end of a meal as it is a dessert in itself, or naturally at 4pm on a Sunday by the fireplace with a brioche like kougelhof.
Grapes with 100% noble rot are cut and brought whole to the pneumatic press. The harvest is so small that we produce the equivalent of one small glass per vine. After a 5-hour pressing, we carry out a fermentation at low temperature. This is followed by 18 months of maturation on fine lees in a half-muid. This 500 L oak room is specially designed at our request with a fine and slow toasting by the cooperage Chassin. The aromas of the wine are thus preserved and enhanced.
