A vibrant and natural wine, made from old plots of Pinot Noir. Magnificent ageing potential.
Very delicate, elegant and silky wine. To be served with poultry, lamb or veal.
The grapes are harvested by hand. When they arrive at the cellar, we destem them before carrying out a fermentative maceration for 18 days with daily pumping over. After this maceration, a delicate pressing of the marc is carried out using a pneumatic membrane press. Malolactic fermentation and ageing in oak barrels for 22 months follow. Bottling in September 2021. Unfiltered wine, natural winemaking, no inputs.
